Dessert Tables
Cardamom Brioche Sliders, Saffron Curd, and Spiced Mexican Cocoa Delicacies.
The Art of the Festive Sideboard
The finale of a grand holiday feast should not leave guests weighed down by heavy, monotone starches. Instead, we treat the dessert table as a sparkling gallery of hand-held treats where contrasting notes—bittersweet cocoa, warm cardamom spice, floral saffron, and tart mountain berries—delight every craving.
In Sweden and Norway, the holiday season belongs to freshly baked lussekatter (saffron buns) and pefferkakor (spiced ginger thins). We honor these foundations while introducing crispy masa pastry crusts and hints of smoked chile to heighten natural sweetness.

- 350g strong bread flour & 7g active dry yeast

- 70g golden granulated sugar & 1 tbsp freshly ground green cardamom seeds
- 75g unsalted butter, softened at room temperature
- 1 medium organic egg (plus 1 egg for wash)
- Ganache: 200g 70% dark chocolate, 150ml heavy cream, 1 pinch cayenne pepper
- Finish: Pearl sugar and flaky sea salt
Method: Knead dough with flour, milk, yeast, sugar, egg, and freshly crushed cardamom for 10 minutes until elastic. Work in the butter gradually. Rest for 1 hour. Shape into 16 uniform small rounds, brush with egg wash, sprinkle pearl sugar, and bake at 200°C for 10-12 minutes until golden. Cool, slice horizontally, and pipe with warm, gently spiced chocolate ganache.
Styling Tips for the Holiday Dessert Station
Present sweets across varied vertical levels using wooden risers, brass stands, and vintage porcelain platters. Scatter fresh cedar sprigs, whole cinnamon quills, and dried star anise across the tablecloth to perfume the ambient air.
Offer small espresso cups filled with hot spiced Mexican hot chocolate or strong dark roast Scandinavian coffee alongside fresh oat milk for self-service.
